The hotel has been serving 100% vegetarian food since it opened 25 years ago and all our ingredients are now also certified organic. Many of our ingredients are also locally produced, including some cheeses, milk, eggs, flours, vegetables and fruit. We are conversant with the destruction of soil and food nutrients resulting from modern farming practices and are opposed to styles of cooking that result in loss of goodness and vitality. We firmly believe in ‘real food’, ie unrefined food containing no artificial additives, colouring, preservatives etc. The use of oils and fats are kept to a minimum.
